Mix the overnight oats
- Combine the rolled oats, milk, Greek yogurt, brown sugar, chia seeds, cinnamon, vanilla extract, and salt in a medium bowl or a large mason jar.
- Stir well until the brown sugar dissolves and the oats are evenly coated, with no dry oat patches.
Portion and chill
- Divide the mixture into two airtight jars or containers.
- Refrigerate for at least 6 hours or overnight until the oats are soft and creamy, then keep jars sealed.
Serve and top
- Stir the oats before serving to re-incorporate any thickened chia gel.
- Add a splash of milk if a thinner consistency is desired, then stir again.
- Top with sliced bananas, chopped pecans or walnuts, a sprinkle of extra brown sugar, or your favorite toppings before serving.
Notes
For best texture, let the jars sit undisturbed overnight so the chia fully thickens; give the mix a thorough stir right before serving. Store in airtight jars in the refrigerator for 4-5 days. Freezing is not recommended because the oats and yogurt texture can turn grainy. For a lower-sugar option, reduce the brown sugar to 1 tbsp and sweeten with berries or a small maple syrup drizzle to taste.
