Ingredients
  

For the Chicken
  • 2 lb boneless, skinless chicken thighs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 2 eggs
  • 2 tbsp milk
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup vegetable oil for frying
For the Cilantro Lime Butter
  • 3 tbsp unsalted butter
  • 3 garlic, minced
  • 1 tsp lime zest
  • 2 tbsp fresh lime juice
  • 0.25 cup chopped fresh cilantro
  • 0.25 tsp crushed red pepper flakes optional
For Serving
  • 1 lime wedges
  • 1 fresh cilantro leaves

Method
 

Season and dredge
  1. Pat the chicken thighs dry with paper towels, then season both sides with salt, black pepper, garlic powder, onion powder, smoked paprika, and cumin.
  2. Whisk together the eggs and milk in a shallow bowl.
  3. Combine the all-purpose flour, panko breadcrumbs, and grated Parmesan cheese in a second shallow bowl.
  4. Dip each chicken thigh into the egg mixture, then coat thoroughly in the breadcrumb mixture, pressing gently so the coating adheres well.
Fry the chicken
  1. Heat the vegetable oil in a large skillet over medium heat until shimmering.
  2. Fry the chicken for 5–6 minutes per side, or until deeply golden, crispy, and the internal temperature reaches 165°F, flipping once when browned.
  3. Transfer the cooked chicken to a wire rack while preparing the butter sauce, keeping it crisp.
Make cilantro lime butter and serve
  1. Melt the unsalted butter in a small skillet over medium-low heat, then add the minced garlic and cook for about 1 minute until fragrant.
  2. Stir in the lime zest, fresh lime juice, chopped fresh cilantro, and crushed red pepper flakes if using, cooking for 30 seconds so it looks glossy.
  3. Spoon the warm cilantro lime butter over the crispy chicken.
  4. Garnish with additional fresh cilantro leaves and serve with lime wedges.

Notes

For the crispiest coating, keep oil shimmering (not smoking) and avoid moving the chicken for the first couple minutes of each side. Store leftovers in the fridge up to 3 days; rewarm in a 400°F oven or air fryer until hot to help crisp the crust. Freezing is not recommended because the coating loses crunch. If you want a dairy-free swap, use a dairy-free butter and omit the Parmesan (replace with extra flour+panko) for a different but still crisp crust.
