Method
Preheat and prepare the dish
- Preheat the oven to 375°F (190°C). Lightly grease a 9 × 13-inch casserole dish.
Cook and crumble the bacon
- Cook the bacon until deeply golden and crisp. Transfer to paper towels and let it drain before roughly crumbling, then reserve about 1/4 for the final topping.
Season and prep the chicken
- Pat the chicken dry and cut into roughly 1-inch pieces. Season with kosher salt, black pepper, garlic powder, onion powder, and smoked paprika.
Brown the chicken
- Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for approximately 4–5 minutes, turning occasionally, until lightly golden (it does not need to cook completely).
- Transfer the browned chicken to the casserole dish.
Blanch the broccoli
- Blanch the broccoli florets in boiling water for approximately 2 minutes, then drain thoroughly. Alternatively, microwave them for 1–2 minutes so they remain bright green and slightly firm.
Make the creamy ranch sauce
- Combine softened cream cheese, sour cream, heavy cream, ranch seasoning mix, minced garlic, dried dill, and black pepper in a bowl. Mix until relatively smooth, then stir in 3/4 cup cheddar, 1/2 cup mozzarella, and 3/4 of the crumbled bacon.
Assemble the casserole
- Add the broccoli to the chicken. Spoon the creamy ranch mixture over everything and gently fold until the chicken and broccoli are evenly coated, without overmixing.
Add cheese and bacon topping
- Sprinkle the remaining 3/4 cup cheddar and 1/2 cup mozzarella evenly over the casserole. Scatter about half of the reserved crispy bacon over the cheese.
Bake
- Bake uncovered for approximately 20–25 minutes until the sauce is bubbling and the chicken reaches 165°F (74°C).
Broil for browning
- Broil for approximately 1–2 minutes until the cheese develops attractive golden-brown blistered spots. Watch carefully to prevent burning.
Rest and finish
- Remove from the oven and let the casserole rest for 5–10 minutes. Finish with the remaining crispy bacon, chopped chives, and optional sliced green onions and freshly ground black pepper.
Notes
Pro tip: If your chicken pieces are very different sizes, arrange them so they’re close to 1-inch for even browning and don’t fully cook before baking. Refrigerate leftovers in an airtight container for up to 3–4 days; reheat in the oven or microwave until hot. Freezing is not recommended because the dairy-based sauce can break when thawed. For a lighter option, swap part-skim cream cheese and use reduced-fat cheese (the bake still works, just less rich).
