Preheat and prep the dish
- Preheat the oven to 375°F (190°C), then lightly grease a 9 × 13-inch baking dish.
Blanch the broccoli

- Reduce heat to low and stir in 1 cup cheddar and 1/4 cup Parmesan until melted and smooth, keeping the sauce creamy but still loose enough to coat the rice.
Assemble the casserole
- In the baking dish, combine cooked rice, browned chicken, and blanched broccoli.
- Pour the cheese sauce over everything and gently fold until evenly distributed, avoiding aggressive mixing so chicken pieces stay visible and broccoli florets stay intact.
- Sprinkle the remaining 1/2 cup cheddar and 1/4 cup Parmesan evenly over the top.
Add crispy topping
- Combine panko breadcrumbs with melted butter, then scatter over the cheese topping.
- Sprinkle the additional 1/4 cup cheddar over the panko layer for a more textured surface.
Bake and finish
- Bake uncovered for 20–25 minutes until bubbling around the edges and the chicken reaches 165°F (74°C).
- Broil for 1–2 minutes if necessary to create a deeply golden, lightly crisp topping.
- Let the casserole rest for 5–10 minutes, then finish with chopped fresh parsley and optional freshly ground black pepper.
