Crispy Bacon Brussels Sprouts

Crispy bacon Brussels sprouts are roasted at high heat until the bacon is crisp and the sprouts are tender with deeply browned edges. Halving the sprouts and placing them cut side down helps create golden, caramelized surfaces.

Ingredients

  • 2 lb Brussels sprouts trimmed
  • 6 oz bacon cut into 1/2-inch pieces
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Halve the Brussels sprouts lengthwise, quartering any large ones.
  3. Toss the Brussels sprouts with the bacon, olive oil, salt, and pepper in a large bowl.
  4. Spread the mixture in a single layer on a large rimmed baking sheet, placing the sprouts cut side down where possible.
  5. Roast for 25 to 30 minutes, stirring once halfway through, until the bacon is crisp and the sprouts are tender with deeply browned edges.

Notes

For the deepest browning, place the sprouts cut side down and avoid crowding the baking sheet. Refrigerate leftovers in an airtight container for 3 to 4 days; freezing is not recommended because the sprouts can become soft.
