  • 32 buttery round crackers Crisp crackers for assembling.
  • 8 oz sliced deli turkey breast Use thinly sliced for easy layering.
  • 8 oz sliced cheddar cheese Cut into cracker-sized squares.
  • 1 cup red grapes Wash and dry before packing.
  • 1 cup cucumber slices Wash and dry thoroughly to prevent sogginess.
  • 1 cup baby carrots Wash and dry, then pack.
  • 4 tbsp hummus or ranch dip Portion into small lidded cups per container.
  • 4 apple slices Toss with a little lemon juice to prevent browning.
  • 4 small dark chocolate squares Optional add-on.
  • 1 fresh parsley Optional garnish.

Method
 

Prep the fresh components
  1. Wash and thoroughly dry the grapes, cucumber slices, baby carrots, and apple slices. This keeps crackers crisp and prevents watery containers.
Prep the cheese
  1. Cut the cheddar cheese slices into cracker-sized squares. Aim for pieces that sit beside the turkey without hanging over.
Assemble the lunch containers
  1. Divide the crackers evenly among four meal-prep containers. Keep crackers on one side so they stay crisp.
  2. Fold the turkey slices and arrange them beside the cheese squares. Place them so each serving has an equal portion.
  3. Add the grapes, cucumber slices, baby carrots, and apple slices to each container. Distribute evenly across all four containers.
Pack the dips and optional chocolate
  1. Spoon 1 tablespoon of hummus or ranch dip into a small lidded cup and place it inside each container. Keep the dip separate until serving.
  2. Add a small piece of dark chocolate if desired. Seal it so it stays intact and doesn’t melt.
Chill and serve
  1. Seal the containers and refrigerate for up to 3 days. Serve chilled and let everyone build their own cracker sandwiches.

Notes

Pro tip: dry all produce very well (especially cucumber and grapes) so the crackers stay crisp in the fridge. Refrigerate assembled containers up to 3 days; freeze not recommended because crackers can soften. For a dairy-free swap, use dairy-free cheese slices (and keep the same portion amounts) to accommodate lactose-free diets while preserving the build-a-sandwich format.
