Ingredients

  • 1.5 lb carrots peeled and cut into 1/2-inch-thick coins
  • 0.5 cup water
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 0.5 tsp kosher salt
  • 0.125 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Place the carrots and water in a 12-inch skillet and cover.
  2. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 8 to 12 minutes, until the carrots are fork-tender.
  3. Drain any remaining water from the skillet, then add the butter, honey, salt, and pepper.
  4. Cook over medium heat, stirring frequently, for 2 to 3 minutes, until the butter has melted and the carrots are glossy.

Notes

For the best texture, simmer just until the carrots are fork-tender before glazing. Refrigerate leftovers in an airtight container for 3 to 4 days; freezing is possible, though the carrots may soften. For a dairy-free version, use a plant-based butter in place of the unsalted butter.
