Ingredients

  • 2 lb sweet potatoes peeled if desired and cut into 3/4-inch cubes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp hot honey

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Line an 18x13-inch rimmed baking sheet with parchment paper.
  3. In a large bowl, toss the sweet potatoes with the olive oil, kosher salt, and black pepper until evenly coated.
  4. Spread the potatoes in a single layer on the prepared baking sheet.
  5. Roast for 25 to 35 minutes, turning once halfway through, until browned and tender when pierced with a fork.
  6. Drizzle the hot honey over the roasted sweet potatoes and toss to coat.

Notes

For even browning, keep the cubes in a single layer and turn them halfway through roasting. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the potatoes can soften. For a vegan option, replace the hot honey with agave mixed with hot sauce.
