Ingredients
  

Chicken
  • 4 boneless, skinless chicken breasts about 6–7 oz (170–200 g) each
  • 1.5 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.75 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.25 tsp smoked paprika
Fresh bruschetta topping
  • 2 cup ripe Roma or cherry tomatoes, diced (300 g)
  • 2 garlic cloves, finely minced
  • 0.25 cup fresh basil leaves, thinly sliced (about 1/4 cup)
  • 1.5 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
For finishing
  • 2 tbsp freshly grated Parmesan
  • 2 tbsp balsamic glaze
  • 1 fresh basil leaves
  • 1 tsp extra-virgin olive oil optional

Method
 

Preheat and prep
  1. Preheat the oven to 425°F (220°C) and lightly grease a medium baking dish.
  2. Pat the chicken breasts completely dry.
  3. Gently pound the thickest portions until the breasts are approximately ¾ inch thick, for even cooking.
Season and sear
  1. Combine Italian seasoning, garlic powder, onion powder, salt, pepper, and smoked paprika.
  2. Rub the chicken with olive oil, then season generously with the spice mix on both sides.
  3. Heat an oven-safe skillet over medium-high heat and sear the chicken for approximately 2 minutes per side to develop a golden color (not fully cooked).
Bake
  1. Transfer the skillet to the oven (or place the chicken in the prepared baking dish) and bake for approximately 12–16 minutes, until the center reaches 165°F (74°C).
Make bruschetta topping
  1. While the chicken cooks, combine diced tomatoes, minced garlic, basil, olive oil, balsamic vinegar, kosher salt, and black pepper.
  2. Mix gently, then let the topping sit for about 10 minutes so the flavors combine.
  3. Before topping the chicken, drain excess tomato liquid using a slotted spoon or by gently draining excess liquid from the mixture.
Rest and finish
  1. Remove the chicken from the oven and let it rest for 5 minutes.
  2. Spoon a generous mound of bruschetta over each chicken breast, keeping some golden chicken surface visible around the edges.
  3. Sprinkle lightly with freshly grated Parmesan.
  4. Drizzle a small amount of balsamic glaze over the bruschetta and chicken, then finish with a few fresh basil leaves.

Notes

For the juiciest chicken, pound to a consistent ~¾ inch thickness and bake only until the center hits 165°F (74°C), then rest 5 minutes before topping. Refrigerate leftovers in a sealed container up to 3 days; for best texture, keep the bruschetta topping separate if possible. Freezing is not recommended because the tomato topping can get watery after thawing. For a lower-sodium option, use reduced-salt Italian seasoning and reduce the kosher salt amounts while keeping the bake timing the same.
