Chicken filling
  • 2 cup cooked chicken breast, finely shredded
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.25 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp salsa optional
Cheese and tortillas
  • 2 cup shredded mild cheddar cheese
  • 8 mini flour tortillas (4–5 inches)
  • 2 tbsp unsalted butter, softened

Method
 

Season and heat the chicken
  1. Heat the olive oil in a skillet over medium heat, then add the shredded chicken, garlic powder, onion powder, smoked paprika, salt, pepper, and salsa if using. Cook for 3–4 minutes until heated through, stirring so the spices coat the chicken evenly.
Build the mini quesadillas
  1. Lay the mini tortillas on a clean surface and sprinkle a thin layer of cheddar cheese over half of each tortilla. This creates a melty base where the chicken can stick.
  2. Divide the seasoned chicken evenly among the tortillas, then top with the remaining cheddar cheese. Keep the edges relatively clear so they crisp when folded.
  3. Fold each tortilla in half and lightly spread the outsides with softened butter. The butter helps the exterior turn golden and crunchy.
Cook until golden and melty
  1. Heat a large nonstick skillet over medium heat and add the quesadillas. Cook for 2–3 minutes per side until golden brown and the cheese is fully melted.
Cool and slice
  1. Transfer the quesadillas to a cutting board and let them cool for 2 minutes. This firms the cheese slightly so your slices hold together.
  2. Slice each mini quesadilla into halves or quarters. Serve warm for best melt and crunch.
Serve
  1. Serve with sour cream, mild salsa, guacamole, and a sprinkle of fresh cilantro if desired. Add toppings on the side so the tortillas stay crisp longer.

Notes

For the crunchiest edges, use medium heat (not high) so the cheese melts before the tortillas over-brown. Store in an airtight container in the fridge for up to 3 days; reheat in a skillet over medium heat until warmed and lightly crisp.
