Prep and make the pumpkin batter
- Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners.

- Beat the eggs, granulated sugar, and light brown sugar until smooth, then mix in the vegetable oil, pumpkin purée, and vanilla extract.

Make the cream cheese filling and streusel
- Beat the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Stir together the all-purpose flour, light brown sugar, and ground cinnamon for the streusel, then cut in the cold unsalted butter until coarse crumbs form.
Assemble and bake
- Fill each muffin liner halfway with pumpkin batter.
- Spoon about 1 tablespoon of cream cheese filling into the center of each muffin, then cover with additional pumpkin batter until the cups are about 3/4 full.
- Sprinkle the streusel evenly over each muffin.
- Bake at 375°F for 20–24 minutes, until the tops are golden and a toothpick inserted into the muffin portion comes out clean.
- Cool in the pan for 10 minutes, then transfer the muffins to a wire rack and serve slightly warm or at room temperature.
