Ingredients

  • 1 breast (4 to 6 lb) turkey breast bone-in, skin-on, thawed
  • 6 tbsp butter unsalted, softened
  • 4 cloves garlic minced
  • 1 tbsp parsley fresh, chopped
  • 1 tsp thyme leaves fresh
  • 1.5 tsp kosher salt
  • 0.5 tsp black pepper

Equipment

  • 1 9x13-inch roasting pan

Method

  1. Preheat the oven to 350°F and position a rack in the lower-middle of the oven.
  2. Remove the turkey breast from its packaging and remove any giblets.
  3. Pat the turkey dry with paper towels.
  4. Set the turkey skin side up on a rack in a 9x13-inch roasting pan.
  5. Stir together the butter, garlic, parsley, thyme, salt, and pepper in a small bowl.
  6. Gently loosen the skin over the breast meat and spread about half the butter mixture underneath.
  7. Rub the rest of the butter mixture over the skin.
  8. Roast for 1 1/2 to 2 1/4 hours, loosely tenting with foil if the skin browns too quickly, until a thermometer inserted into the thickest part of the breast without touching bone reads 165°F.
  9. Transfer the turkey to a carving board.
  10. Rest for 20 minutes before carving.

Notes

For juicy turkey, let it rest for the full 20 minutes before carving. Refrigerate leftovers for 3–4 days or freeze for up to 3 months. For a dairy-free option, use a plant-based butter alternative.
